This wine is all about freshness and texture. The grapes are handpicked and whole-bunch pressed with just a light settling. It’s fermented partly in medium-toast French oak barriques and partly in stainless steel, then aged for six months in oak. During this time, the lees get stirred every couple of weeks for a creamier feel. Malolactic fermentation is skipped to keep things crisp and vibrant.
